Cheeseburger Tacos with Braised Pork and a Sweet & Tangy North Carolina-Style BBQ Sauce

The burgers are cooked Oklahoma-Onion Burger style, with shaved onion cooked under the patties.


The BBQ sauce is a quick North Carolina-Style BBQ sauce, where I use ketchup as well as apple cider vinegar and brown sugar. Some classic North Carolina BBQ folks will only use vinegar, which goes great with pork. The cheese used here is processed American, or in Spain, they call it "queso Burger".

Ingredients:

1/2 cup apple cider vinegar

3 Tbsp brown sugar

1/2 cup Ketchup

1 tsp red pepper flakes

1/2 tsp Kosher salt

1/4 tsp ground cayenne pepper

1 cup braised pork, gently shredded

1/2 red onion, very finely sliced

6oz ground beef, shaped into 3 long rectangular patties

1 tsp Kosher salt

1 Tbsp sunflower seed oil

3 slices processed American cheese

3 flour tortillas

1.5 Tbsp prepared mayonnaise

1.5 cups shredded lettuce

1/4 cup sliced tomato

1/2 avocado, sliced


Instructions:

(1) Begin by preparing the North Carolina-Style BBQ Sauce. To make the sauce, combine the apple cider vinegar, brown sugar, Ketchup, red pepper flakes, Kosher salt, and ground cayenne pepper.


(2) Whisk together the ingredients and add more acidity, sweetness, or heat according to your liking. Set the prepared North Carolina-Style BBQ sauce aside for later.


(3) Prepare your taco components, including your braised pork, shaved red onion, beef patties, processed American cheese, tortillas, and condiments.


(4) Salt the patties on both sides.


(5) Add some sunflower seed oil to a saute pan and increase the heat until the pan is almost smoking.


(6) Add the shaved red onion to the pan in three sections that are the same size as your rectangular burger patties.


(7) Immediately top the onions with the burger patties, and press the burgers into the onions using a spatula.


(8) When the burgers have cooked for a few minutes, carefully flip the patties, and cover each patty with a slice of American cheese.


(9) When the burgers are cooked and the cheese is melted, remove from the heat and assemble the cheeseburger pulled pork tacos.


(10) Heat the tortillas quickly in a dry skillet until they are lightly toasted on both sides.


(11) Add some shredded lettuce to the bottom of the each tortilla.


(12) Add some mayo on top of the shredded lettuce.


(13) Add some tomatoes on top of the lettuce.


(14) Add the cooked onion cheeseburgers on top.


(15) Top with the braised pork.


(16) Top with the North Carolina-Style BBQ Sauce that you made earlier.


(17) Top with the sliced avocado, and enjoy!
